Creamy & Dreamy Vegan Cheesecake
Description
This velvety vegan cheesecake is rich, creamy, and made with wholesome plant-based ingredients. With a luscious cashew and coconut filling atop a crunchy almond-oat crust, it’s the perfect dessert for any occasion!
Ingredients:
For the Crust:
1 cup almonds (or walnuts)
¾ cup rolled oats
2 tablespoons maple syrup
2 tablespoons coconut oil, melted
½ teaspoon vanilla extract
Pinch of salt
For the Filling:
1 ½ cups raw cashews (soaked for 4 hours or overnight)
1 cup full-fat coconut milk
⅓ cup maple syrup
2 tablespoons coconut oil, melted
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 teaspoon lemon zest (optional, for extra brightness)
Pinch of salt
Instructions:
Prepare the Crust: In a food processor, blend almonds and oats until finely ground. Add maple syrup, melted coconut oil, vanilla extract, and salt. Pulse until the mixture holds together when pressed.
Form the Base: Press the crust mixture firmly into the bottom of a lined 8-inch springform pan. Place in the freezer while preparing the filling.
Make the Filling: Drain and rinse the soaked cashews. Blend them in a high-speed blender with coconut milk, maple syrup, coconut oil, lemon juice, vanilla extract, lemon zest, and salt until completely smooth.
Assemble: Pour the filling over the crust and smooth the top with a spatula.
Chill: Cover and refrigerate for at least 4 hours (or overnight) until firm.
Serve: Once set, remove from the pan, slice, and enjoy! Garnish with fresh berries or a drizzle of melted dark chocolate for an extra treat.

Cheesecake has always been a symbol of celebration in my family. Whether it was birthdays, holidays, or just a special treat, there was always a creamy, decadent cheesecake on the table. When I went vegan, I was determined to recreate that same luxurious experience without dairy. After experimenting with different ingredients and techniques, I finally created a vegan cheesecake that rivals the traditional version—silky smooth, flavorful, and completely plant-based.
This vegan cheesecake is a dessert that impresses everyone—whether they’re vegan or not! It’s creamy, flavorful, and perfectly balanced, making it the ultimate guilt-free indulgence. The best part? It’s incredibly easy to make. One bite, and you’ll be hooked!
Enjoy and happy indulging!
The Importance of Each Ingredient
Almonds & Oats: Create a sturdy, slightly crunchy base for the crust.
Maple Syrup: Provides natural sweetness and depth of flavor.
Coconut Oil: Helps bind the crust and firm up the filling.
Cashews: The key ingredient for a rich, creamy, and dairy-free texture.
Coconut Milk: Adds a luscious, smooth consistency and a hint of natural sweetness.
Lemon Juice & Zest: Enhances flavor and gives that slight tang found in classic cheesecakes.
Vanilla Extract: Adds warmth and depth to the filling.
Salt: Balances the sweetness and enhances flavors.
Cooking Tips
Soak the Cashews Properly: Soaking cashews softens them, ensuring a silky-smooth texture in the filling.
Use Full-Fat Coconut Milk: This adds richness and helps the cheesecake set properly.
Blend Until Completely Smooth: A high-speed blender will give you the creamiest filling.
Chill for Best Results: Let the cheesecake set for at least 4 hours—overnight is even better!
Customize Your Flavors: Add cocoa powder for a chocolate version or swap lemon zest for orange zest for a citrusy twist.
Why This Recipe is the Best
Ultra-Creamy Texture: The combination of cashews and coconut milk creates a perfectly smooth filling.
Naturally Sweetened: No refined sugars—just pure maple syrup!
No Baking Required: Easy to make with no need for an oven.
Gluten-Free & Dairy-Free: A wholesome alternative to traditional cheesecake.
Customizable: Easily adjust flavors to your preference!
