Ingredients:
1 ¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 tablespoon sugar or maple syrup
1 cup unsweetened plant-based milk (such as almond, soy, or oat)
1 tablespoon apple cider vinegar (or lemon juice)
2 tablespoons melted coconut oil or vegan butter
1 teaspoon vanilla extract
Cooking spray or additional oil for the waffle iron
Instructions:
Preheat the waffle iron: Set your waffle maker to medium heat and lightly grease it with cooking spray or a brush of oil.
Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
Prepare the buttermilk: In a separate bowl, combine the plant-based milk and apple cider vinegar. Let it sit for 5 minutes to create a vegan buttermilk substitute.
Combine wet ingredients: Add the melted coconut oil (or vegan butter) and vanilla extract to the buttermilk mixture.
